I have 100+ people to feed. Can this style of catering work?
Absolutely! There are a few logistics that need to be put into place, but we can still feed every one to the brim with our amazing hand-stretched woodfired pizza.
This is a hand-made food, created as the event runs; that's why it tastes so good. This style unfortunately doesn't allow 30 fresh pizzas suddenly dropped on a table as the first pizzas would be cold by that point. Instead, your guests have access to a steady stream of pizzas produced three at a time every few minutes, so they can eat a couple of slices here and a couple of slices there! What better way to experience amazing pizza than to try lots of different varieties and flavours?
Corporate and business lunches
For events of 80+, we recommend the staff come in waves of smaller groups while we keep the food running fast and hot. This means the line around the table is less frantic and people can leisurely eat during the time allocated before moving on. Groups of 20-30 each time is perfect.
Another option is servers passing the slices to people using tongs from behind table, similar to a cafeteria-style meal. This is great for portion control so the eating matches the speed at which the pizzas are made. We have successfully, and with great flair, fed180 people in 35 minutes with this style!
The way this style works is:
Staff line up along the table ‘cafeteria-style’.
Each person is initially served two slices by a server, selecting slices from what is available (a ‘point-and-shoot’ option). This keeps the line moving very quickly and ensures people are getting something quick to take the edge off.
They then join the end of the line again and keep coming past getting their two slices as many times as their appetite and time allows.
Dietary pizzas are ordered in advance and we put them in boxes to be collected by the people required.
We recommend staff that have a flexible lunch time join closer to the end of the service time so we can get the bulk of the feeding done at the beginning.
Got a short business lunch or dinner function? We can also add an additional truck for an extra charge (dependent on availability) and produce double the pizzas. This is great for really big events with a limited meal duration.
Family, friends and private parties
We regularly do meals of 100+ guests for private functions and parties. They are rarely time-limited so for this method, we just don't go anywhere until everyone is full. We tend to recommend some small grazing food to start the meal until we ripple the pizzas out amongst the guests, but everyone ends up full in the end so that even the less-patient family members end up bursting at the seams. For weddings, we encourage the MC to assure guests that pizzas will come at a steady rate, as when guests know what is happening, they're happy to enjoy the food as it comes out.
Wait staff
These are an excellent resource for your event, as the wait staff move the pizzas from the truck, leaving the chefs to pump out the food at an even faster rate. Our wait staff are highly trained and can carry the pizzas around your event or serve from behind the table, keeping an eye on things for you so you don't have to worry.
