Carlo was born in Naples under the shadow of Mt Vesuvius, surrounded by the best pizza in the world!! It is said that Naples was where pizza was invented.
With his extended family owning over a dozen pizzerias in and around Naples, you could say that pizza was in the blood, so at 15 years of age, Carlo began working for his Aunt in a bustling Pizzeria right in the heart of Naples. Established in 1945, the Pizzeria is still a busy hub and a favorite with the daily market goers and tourists. It was here that Carlo started his apprenticeship as a “Pizzaiolo” (Pizza Chef). The Pizzaiolo must be a real “maestro”, spending over three years learning the traditional techniques of making the perfect pizza.
After many years working in his family’s pizza restaurants Carlo decided it was time to open his own Pizzeria/Restaurante. There, Carlo spent the next ten years supplying pizza and traditional Napolitano fair to the residents and tourists of the iconic streets of Naples.
In 2003, Carlo came to Australia for a holiday and was quickly offered a working sponsorship by a Sydney-based pizza restaurant. Within that time he met his wife and now calls Australia home.
